Recipes: Fried Egg with Warm Spinach Salad & Potatoes
A super easy lunch or dinner for one! So yummy.
Salad:
1 large handful spinach, washed
1 small red potato (or whatever kind you have on hand)
coconut oil
salt & pepper
parmesan
1 egg
Dressing:
honey
dijon mustard
red wine vinegar
~Heat small sauté pan to medium, add about 1 tsp of coconut oil, enough to coat the bottom of the pan.
~Cut potatoes into 1/2" thick chunks, add to pan. Season with salt & pepper, cook potatoes until done to your likeness, about 12-14 minutes. Add more coconut oil if necessary during the cooking, and stir every couple of minutes.
~For dressing: mix together 2 parts red wine vinegar, 1 part dijon in a small side bowl. Add honey if you like some sweetness in your dressing.
~ Once potatoes are cooked, add directly to bowl of spinach and toss, at this point grate some parmesan over the mix and cover with a lid so the heat doesn't escape.
~In the same pan the potatoes just left, crack one egg into the side of the pan and fry to your likeness--a soft-cooked egg adds to the dressing deliciously.
~Pour dressing on top of spinach and potatoes and toss. Add egg on top of spinach mix, shave a bit more parmesan and enjoy!
