Recipes: Gluten Free Crepes!


Crepes! Gluten free! They are so easy to make! Whisk, wait, pour, et voilà!



2 eggs (1 whole egg + 1 egg white)
2 Tbsp water
1/2 cup tapioca flour
vanilla
coconut oil (for pan)

Makes 4-6 small crepes


~Whisk together 1 whole egg and additional egg white. Mix in 2 Tbsp water and a splash of vanilla (about 1/2 Tbsp) to the eggs.

~Whisk in 1/2 cup tapioca flour until smooth and all ingredients are combined. Mixture will be very liquid-y--let sit 5 minutes.


~Wipe bottom and sides of small non-stick sauté pan with coconut oil so batter doesn't stick, place pan over medium heat.

~When pan is very hot, pour a small amount of batter and swirl it around in the bottom of the pan so it spreads out thin, sort of a whirling/circular motion until all batter is a consistent thickness.

~Cook the batter until it loses the look of wetness (you'll know when you see it), about a minute or so. Flip with a spatula and cook a little less than a minute on the other side.


~Serve with butter & honey, fruit, Nutella, or savory items like ham & cheese. Fold them up into fourths and dig in!
